This zucchini & cheese pie is delicious and super easy to make.

Ingredients:
• 1 cup flour
• 1 1/2 teaspoon baking powder
• 1/2 teaspoon salt
• 1 tablespoon butter
• 1/2 cup vegetable oil
• 4 eggs
• 1/2 cup grated Parmesan cheese
• 1/2 cup grated cheddar cheese
• 3 cups thinly sliced zucchini
• 1 small sweet onion, diced
Instructions:
- Preheat oven to 350°F (180°C). Spray a deep dish with cooking spray or melted butter and set aside.
- In a large bowl, whisk together the flour, baking powder, salt and butter until crumbling
- Add oil and eggs. Whisk.
- Add the parmesan and cheddar cheese; stir to combine.
- Fold in the zucchini and onion.
- Pour into prepared dish.
- Bake for 45 minutes, or until cooked through and golden brown.
